Sugar'n Spice Blackberry Jam Recipe

Savor summer's finest flavors with this blackberry jam recipe. Spiced with a bit of cinnamon and lemon zest, the just-right sweetness of robust blackberries make for an elegant jam. Very soft and spreadable - perfect for toast or muffins! Enjoy the convenience of being able to use either fresh or frozen blackberries!

Sugar'n Spice Blackberry Jam

4 c. fresh or frozen blackberries, thawed

1/4 c. lemon juice

4 1/2 c. white sugar

1 1/2 tsp. grated lemon peel

1/4 tsp. cinnamon

In a heavy 4-quart pan, combine berries and lemon juice. Mash berries slightly, if desired. Bring to a boil over medium heat, stirring often. Stir in sugar, lemon peel, and cinnamon. Return to a boil, stirring to dissolve sugar. Reduce heat to medium and boil gently until temperature reaches 220 degrees as registered by a candy thermometer (about 15 minutes). Stir often. Remove from heat and stir jam. Ladle jam into 4 hot, sterilized 1/2 pint jars. Place broken piece of cinnamon stick on the top of each jar.

Wipe rims of jars with damp cloth. Place lids and rims on; process in water bath canner for 20 minutes.
