Blueberry Pancake Recipe

Pancakes are some of my favorite things to have for breakfast...so, when I found this blueberry pancake recipe, naturally I HAD to try it!

I cooked up these yummy pancakes one morning when my Dad was on a business trip. Even though we had leftovers, they sure didn't last very long in the refrigerator! I think part of what makes these pancakes so special is the berry topping; it turns this ordinary blueberry pancake recipe into something much more extraordinary. I'm thinking these pancakes might make a very special Christmas, Easter, or birthday breakfast!

To make these pancakes a little healthier, you can use whole wheat flour. This will always make your pancakes more filling. Or, try subtituting a cup of buttermilk for the milk to make them extra fluffy.

If you have leftovers (like I did!) you can easily freeze them, or simply store them in the refrigerator. They heat up great in the toaster.

  • 2 cups flour
  • 1/4 cup sugar
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1 1/2 cups milk
  • 1 cup (8 oz.) sour cream
  • 1/3 cup butter, melted
  • 1 cup fresh or frozen blueberries
  • BERRY TOPPING

    • 1/2 cup sugar
    • 2 T. cornstarch
    • 1 cup cold water
    • 4 cups berries, fresh or frozen

      1.In a large bowl, mix flour, sugar, baking powder, and salt. In a seperate bowl, combine eggs, milk, butter, and sour cream. Mix the wet ingredients into the flour mixture just until moistened.

      Carefully fold in blueberries. This is one of those directions I never heeded until I saw what happened when I didn't fold in gently. Your pancake batter will turn blue if you stir it too long and too vigorously!

      2. Pour batter by 1/4 cupfuls onto a greased hot griddle. Cook until both sides are nicely browned. You may want to slice one open before removing just to make sure there's not any gooey spots in the middle.

      3. To make the berry topping (the best part!), combine sugar and cornstarch in a saucepan. Stir in the water until mixture is smooth. Add berries and bring to a boil, stirring constantly. When mixture has thickened, remove from heat and serve over warm pancakes.




      With all my hungry brothers (I have four of them!) this blueberry pancake recipe was perfect. This recipe makes 20 medium pancakes; I doubled it. :-) Pancakes on their own can be a little boring, but with the fruity topping plus the yummy blueberries inside the pancakes, these were far from boring!
