Isn't breakfast supposed to be the most important meal of the day? That's what all the experts say, anyway. All I know is that I'm an early morning eater, and when I wake up, I'm like, hungry. Really hungry.
When I was about twelve or thirteen, I fell in love with the idea of making a big breakfast. I thought the idea of waking up to sizzling bacon and the smell of coffee brewing was so.....country-ish. Romantic. Story-booki-ish.
I had visions of Ma Ingalls (Little House on the Prairie) standing in our kitchen with flour on her apron and a perfect bun in her hair...preparing "flapjacks" or "hotcakes" for her strapping lumber jack husband.
That could be me! I remember thinking.
So, I started making breakfasts that did not include cereal. As I got older, I discovered some really good easy breakfast recipes that were kind of my "old-faithfuls". Eventually I figured out that I was not Ma Ingalls (a let-down), and by then I had everyone used to pancakes several times a week.
Now? Well, I'm just a big sis to four brothers who like to eat. A lot. Plus I still wake up starving. So I try to plan simple, easy breakfast recipes that go beyond cheerios, when I can.

Sour Cream Blueberry Pancakes
These pancakes have berries inside and outside - a special blueberry sauce goes over the top. No need for pancake syrup here!
Amazing Cinnamon Rolls
These don't exactly qualify as easy, I have to warn you. But they are the most incredible cinnamon rolls I've ever had. (That's a maple glaze on top there....looks good, right?) Start them the night before for a yummy breakfast the next day.

One of my friends gave me this recipe a few years ago. It sure beat the banana bread recipe I already had! This is not your typical dry, crumbly bread, either. It's moist and full of chocolate chips.
Baked Oatmeal
Not your traditional gooey oatmeal. I promise. In fact, not even close. Think fresh-out-of-the-oven oatmeal cookie with warm milk and maple syrup on top. Mmmm. Great if you're in a crunch and need a fast breakfast!
